Egg Fried Rice (Din Tai Fung style)

Serves 4

3 cups white rice (using cup provided)

3 eggs, lightly beaten

Half bunch of spring onions, chopped

Cooking oil

Directions:

1. Cook rice in rice cooker

2. 2 tbs oil into wok over medium high heat. Pour egg mixture into wok and immediately lower heat. When egg whites starts to change abit colour, pour rice into egg. Mix egg bits evenly around rice. Do not overcook egg, ensuring that that it still looks half cooked. 2 min

3. Add spring onion and mix evenly. 2 min. Add a pinch of salt to taste

4. Scoop all of these back into the rice cooker and keep warm

5. Serve immediately or keep for later in rice cooker
