Lemon Chicken

Ingredients:


o 450g chicken breast

o 1 egg white

o 2 tsp cornflour

o salt

o sesame oil

o 250ml oil

o 3 lemon, zest and juice

o 85ml chicken stock

o 1 tbs sugar

o 1 tbs light soy

o splash dry sherry

o 1 clove garlic, crushed

o 1 red chilli, chopped

o 1 tsp cornfloue, mixed with water

o S & P

Instructions:

1. Combine egg, cornflour, salt, sesame oil and chicken. Leave 20 min

2. High heat, add oil, remove from heat and add chicken. Stir till stop sticking to pan and chicken white. Drain oil and cool

3. Sauce: stock, lemon juice, sugar, soy, sherry, garlic, chilli. Boil and whisk cornflour. Simmer then add chicken. Till well coated

4. Add sesame oil
