Gingered Pork and Cabbage Soup

Serves 8

Ingredients:

6 cups chicken broth

8 ounces boneless pork sirloin, 1/2 inched

1 large onion, chopped

4 garlic cloves, minced

2 tsp ginger, grated

1 tbs cooking oil

3 small tomatoes, chopped

2 medium carrots, finely chopped

1/2 cup small pasta

4 cups thinly sliced cabbage

1/4 cup fresh mint

Directions:

1. In a medium saucepan, 6 cups broth to a boil

2. In another pan, cook pork, onion, garlic, ginger in hot oil till pork brown

3. Add broth. Bring to a boil and stir in tomatoes and carrots. When boiling, reduce heat and simmer for 15 min

4. Stir in pasta and cook 6 min. Stir in cabbage and mint
