Canadian-Bacon Strata


Serves 6

Prep time: 25 minutes
Total time: 4 hours
 
1 Softened butter for pan


4 English muffins, split, toasted, and cut in half

½ pound sliced Canadian bacon, about 10 slices, halved

1 ¼ cups (5 ounces) shredded sharp cheddar cheese

1/3 cup finely shredded Parmesan cheese

8 large eggs

3 cups milk

1 ½ tablespoons Dijon mustard

Coarse salt and ground pepper

¼ teaspoon hot sauce, such as Tabasco

Directions:

1. Butter a 2-quart shallow baking dish (oval or square); set aside. In dish, alternately arrange, cut side down, muffin halves and Canadian bacon. Sprinkle with cheddar and Parmesan cheeses. Set aside.

2. In a large bowl, whisk together eggs, milk, mustard, ½ teaspoon salt, a pinch of pepper, and hot sauce until combined. Pour over muffins and bacon; cover tightly with plastic wrap. Refrigerate at least 2 hours and up to overnight.

3. Preheat oven to 350°. Place baking dish on a rimmed baking sheet; remove plastic wrap. Bake until puffed and set in the center (see note below), about 1 hour and 30 minutes. (Tent loosely with foil if strata starts to brown too quickly.) Let stand 10 minutes before cutting and serving.

Note: With a paring knife, pierce the center of the cooked strata. If it feels firm and the knife comes out clean, the eggs have set and the strata is done.

Quesadillas with Guacamole

2 - 3 ripe avocado

2 - 3 ripe tomato, deseeded

a couple of red chillies

a handful of chopped spring onions

a handful of coriander

salt and pepper

lime juice/ lemon

guacamole (avacado based dip)
(tomatoes, avocadoes, seasonings)

greated cheddar

red capsicum

green chillis

tortillas

sour cream

Guacamole:

2 - 4 ripe avocados

2 - 4 tomatoes

red chilli

* Blend theses

Add 1/2 spring onion

1/2 coriander

Add more tomatoes

Salt and pepper

* Blend again

Add 1/2 chopped avocado for chucny texture. Transfer to bowl with lemon juice

Directions:

1. Grated cheddar, finely chopped spring onions, chopped coriander, red capsicum, green chilli. All chopped and deseeded. Mix in a bowl and sprinkle in 2 layers of tortilla

2. Grill stuffed layes of tortillas 1 min medium heat. Grill till crispy outside and oozing

3. Serve with guacamole and sour cream

Note: You can use left over grilled chicken/ veg/ pork/ seafood

Onion and Thyme Frittata

Serves 4

Prep: 10 min

Cook: 10 min

6 large eggs

1 1/2 large white onion

2 spring fresh thyme

1 tbs oilve oil

1/2 tbs butter

salt

Directions:

1. Beat eggs and 1/2 tsp salt

2. Slice onions into rings about 1/2 cm thick

3. Saute onions on medium heat with oil and butter till golden brown, then add thyme

4. Stir and pour eggs into pan

5. Cook till brown on both sides and moist inside
